In the midwest, learning to make no bakes is practically a rite of passage. They’re easy, filling, and you always have the ingredients around your house.
I’ve never had no bakes with booze in them before, but now that I’m transitioning back to being an East Coast girl, it seemed like the time to start.
Boozy No Bakes
2 cups sugar
4 tablespoons cocoa powder
1 stick (1/2 cup) butter, salted
1/2 cup milk
1 cup peanut butter
3 cups oatmeal
2 tablespoons bourbon
1) In a large sauce pan, combine the butter, cocoa powder, sugar, and milk. Bring to a boil over medium-high heat, and let boil one minute.
2) Remove from heat, and stir in the peanut butter. Once thoroughly incorporated, add the bourbon (let’s be honest – I didn’t measure here. Just don’t go overboard).
3) Stir in the oats, and form into cookie shapes on a sheet of waxed paper. Let cool before you eat them.
