How to make cake batter recipes when you don’t buy cake mix

For the longest time, I would stare at cake batter recipes on Pinterest longingly, wanting to make them but also realizing that I would never buy cake mix. No offense to anyone that does, but I pride myself on cooking from scratch, and cake mix is the opposite of that.

Finally, I stumbled across this recipe from one of my favorite blogs, The Brown Eyed Baker. It makes a *ton* of cake mix, so get all your favorite cake batter recipes ready before you make it. Luckily, it keeps for 2-3 months in the freezer.

(OK, so it doesn’t look like much, but it will change your life)

Yellow Cake Mix, (via Brown Eyed Baker)

2 cups sugar

1 1/2 cups flour

1 1/2 cups cake flour

1/2 cup nonfat dry milk powder

1 tablespoon baking powder

1 cup salted butter, cold and cut into small cubes

1 tablespoon vanilla extract

1) In a food processor, combine the flours, sugar, milk powder, and baking powder. Process for 15-20 seconds.

2) Add butter and vanilla, and process until the mixture is fine and crumbly. For me, this took about 15-20 seconds.

3) Store in an airtight container, and either use right away, or store in the freezer. Should be good for two months, if it takes you that long to use it!
